What does "multi-purpose cellar" or "cellar that can be modulated between mono and multi temperatures" mean?

Climadiff multi-temperature cellars are special in that they offer different refrigeration conditions depending on whether the fan is activated or not.

• If the fan is activated, then the cellar works by stirring cold and the temperature is homogeneous. Your wine is then kept at 12 or 13°C in a conservation cellar. This guarantees a unique and constant temperature in the whole cellar.
• On the other hand, if the fan is deactivated, then the cellar works in static cold and the temperature is naturally distributed inside, with a difference generally observed of 7 to 8°C between the top and the bottom of the cellar. These different temperature levels are natural: the hot air rises, while the cold air falls. You can then store red wine at the top of the cellar and white wine or rosé at the bottom. You now have a service cellar.
